    So what is Nyonya cuisine?

    Nyonya cuisine emerged from marriages between Chinese men who emigrated from the mainland and Malay women. Beyond the ethnic spice heat, it layers in seafood umami, coconut sweetness, and a medley of other flavors — creating something truly unique. Some restaurants take it to bold extremes, and the aroma alone can be a barrier for the uninitiated.

    Being a chain, the Assam Laksa here is toned down on the funk.

    The Assam Laksa here uses onion and pineapple as accents, but the highlight is the generous amount of dissolved (probably) mackerel flakes — deeply umami and addictive, with very little spice. It grows on you fast.

    Generous-sized prawns featured prominently.

    This is the Chicken Hor Fun Soup. Hidden beneath the broth are generously sized prawns. The chicken-based broth is gentle and comforting. No alcohol inside Nu Sentral — it's almost universally unavailable here.
